2 Tbsp Extra Virgin Olive Oil
1 jar (10oz) Clif Family Kitchen Organic Savory Jam
1 package (4oz) Clif Family Kitchen Roasted Almonds & Pitachios
8oz Blue Cheese, crumbled
Preheat the oven to 350 degrees
In a small saucepan, gently melt the butter over a low flame, add olive oil. Separate out some bright green pistachios and roughly chop the nut mix.
Place one sheet of filo into a buttered baking dish 9″x14″) and brush with melted butter and olive oil blend. Repeat three more filo pastry sheets, arranging them in layers. Spread a top the layers of buttered filo with half the onion jam, scatter with half of the nut mix, then crumble in half of the blue cheese.
Add another three layers of buttered filo pastry sheets followed by remaining onion jam, nuts and cheese. Finish with three layers of buttered filo pastry. Before baking the baklava, cut it into diamond pattern in pan. Make sure to cut all the way down through the bottom layer, so the filo doesn’t break when you cut it again after baking. Sprinkle top layer with reserved chopped pistachios.
Bake for 35 minutes in the preheated oven.
